KCHD RECEIVED A COMPLAINT THAT A CUSTOMER RECEIVED A CHEESECAKE SLICE AFTER ITS EXPIRATION DATE. UPON QUESTIONING AND OBSERVING WHAT IS STORED IN THE COOLER, THE STAFF WILL PLACE THE NEW DESSERTS ON THE DISPLAY SIDE OF THE COOLER AND THOSE CLOSER TO THE EXPIRATION CLOSER TO THE DOOR, FOLLOWING PROPER FIFO PROCEDURES. I DID OBSERVE A FEW DESSERTS IN THE COOLER PAST THEIR EXPIRATION DATE. HOWEVER, A 'USE BY' OR 'BEST BY' DATE IS NOT AN INDICATION OF FOOD SAFETY. THESE DATES ARE USED TO INDICATE QUALITY. I RECOMMENDED THAT THE ESTABLISHMENT DISCARD ANY FOODS PAST THEIR EXPIRATION DATE AND ALWAYS DISCARD FOODS THAT SHOW SIGNS OF SPOILAGE. NO ADDITIONAL FOLLOW UP IS REQUIRED FOR THE ABOVE ITEM.
DURING THIS INSPECTION, I OBSERVED WATER LEAKING FROM THE DINING ROOM CEILING, WHERE SEVERAL TILES HAD BEEN REMOVED. NAFEZ SAID THAT A BREAK-IN OCCURRED THROUGH THE ROOF AND THE TEMPORARY COVERING WOULD KEEP PESTS OUT, BUT IS NOT WATERTIGHT. THE AREA IN THE DINING ROOM HAS BEEN CLOSED AND IS FAR FROM ANY FOOD PREP OR STORAGE AREAS. NAFEZ IS WORKING WITH A ROOFING COMPANY TO MAKE THE NECESSARY REPAIRS. I WILL FOLLOW UP WHEN REPAIRS ARE COMPLETE. IF THE LEAK WORSENS OR WATER BEGINS TO TRAVEL TO THE KITCHEN AREA, YOU MUST IMMEDIATELY CLOSE ALL AFFECTED AREAS AND DO NOT USE THEM FOR FOOD STORAGE OR FOOD PREP. ALSO, PLEASE CALL KCHD (815-802-9416) IF THE SITUATION WORSENS. |
